Aahh...a day off from school! After a long winter's nap, the First Little Nguyen joined us in the kitchen this morning. While making a Thanksgiving menu for school last week, he told me one of the first things he wanted to include was Grandma's Cranberry Salad! Now, don't let the use of the term "salad" confuse you because about the only thing of nutrional value in this fluffy, sweet-and-tart concoction would be the antioxidants in the cranberries!
To fully appreciate this delightful treat, one must think back to the Brady Bunch era. I can just imagine Carol Brady in her orange (or was it avocado green?) kitchen, talking with Alice as she prepares the Brady family Thanksgiving feast. Along with a Granny Smith apple, Alice finely chops the cranberries by hand (now we use a food processor) and allows them to mascerate with a bit of sugar while she pours a cup of coffee from the percolator for Carol. Then, she adds chopped walnuts and miniature marshmallows. Finally, Alice folds in a load of whipped cream. Suddenly, from the sliding glass kitchen door, Mike Brady walks in and says, "Nice salad, Alice. Are there marshmallows in it?" to which Carol replies, "Oh, Mike! It's a recipe from the new issue of Better Homes and Gardens magazine!" Oh, such a trip down memory lane....back to 2008!
The key to an airy, light cranberry salad is making it the day before Thanksgiving so that it can sit in the refrigerator overnight. The marshmallows absorb all of the liquids and are like fluffy little clouds when they hit your tongue! Mmmm...it's a throwback from the 60's! Holy Florence Henderson! Anyway, the First Little Nguyen loves Grandma's Cranberry Salad, as does everyone who has ever consumed as little as a spoonful of it (and you are simply lying if you say you don't!). Our family's Thanksgiving feast wouldn't be complete without this dreamy treat!
